Paleo Tzatziki
I love tzatziki. We are going to sneak away and get married, and have creamy dill and garlic babies. Well maybe not, but the flavor and tang of this Paleo tzatziki lingers with me. Maybe it's just the garlic. One little tip: make sure those cucumbers have been stripped of all their peel, or you may end up with a hard to place the bitter taste. At least I found it hard to place; I can be slow here and there.
I think that's normal? At least I hope; being really busy sometimes causes you to overlook the obvious. Maybe I'm not as good at multi-tasking as I would hope to be? There have been times I've been too tired/distracted/distressed to notice something like my underwear on inside out. Once or twice, shirts or even pants. Yes, I have made it thru my work day wearing my pants inside out. Yes, they were Lulu's and yes I can wear them to work and apparently, no one really looks at me long enough to notice my pants are on inside out. I'd call that a win. Kind of like when you walk into a door or window and no one is there to see.
INGREDIENTS
1 batch Paleo Mayo (I omitted the dijon mustard from the mayo recipe, and preferred the flavor)
1 long english cucumber (peeled, seeded and grated)
3 cloves garlic (minced)
2 tbsp lemon juice
1 tsp celery salt
2 tbsp fresh dill (chopped)
1/4 tsp salt
INSTRUCTIONS
Peel, and grate cucumber into a mesh colander or cheese cloth, sprinkle with salt, and let sit for a few minutes.
Add minced garlic, lemon juice, celery salt and dill to mayo; stir well.
