THE ULTIMATE MOJITO… THE SEQUEL – THE CHERRY MOJITO

So…You’ve probably seen my ultimate mojito and hopefully even tried it. It was good, it was very good, it was beyond my highest expectations! It it truly my favorite cocktail drink. I never thought of myself as a bartender, an expert at making cocktails, as a matter of fact if anything, my sister has always been the expert. I’m merely the one that enjoys the cocktails. But in an act of desperation to impress my husband with a great drink for his birthday, the mojito came to life. And impress I did, to see the pleasure in his eyes as he was drinking till the very last drop, I was delighted.

INGREDIENTS

• 2 cups of cherries pitted
• 8 sprigs of mint leaves only
• 1/4 cup sugar
• 1/4 cup lime juice

zest from one lime

• 4 cups of ice
• 1 cup rum
• 2 cups club soda

INSTRUCTIONS

• In a blender add the cherries, mint leaves, lime zest, lime juice, sugar and 2 cups of the ice. Blend well until it's all slushy.
