INGREDIENTS:
LEMON POPPY SEED CAKE
- 3/4 cup unsalted butter, softened
- 1 1/2 cup granulated sugar
- 3 large eggs, room temperature
- 1 teaspoon vanilla extract
- 2 cups all purpose flour
- 1/3 cup cornstarch
- 1 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 3/4 cup sour cream, room temperature
- 3 tablespoons lemon zest, freshly grated
- 1/4 cup freshly squeezed lemon juice
- 2-4 tablespoons poppy seeds (I used 3 tablespoons)
CREAM CHEESE FROSTING
- 8 oz cream cheese, softened
- 1/4 cup unsalted butter, softened
- 3 cups powdered sugar
- 1 teaspoon vanilla extract
- 1 teaspoon freshly squeezed lemon juice
DIRECTIONS:
FOR THE LEMON POPPY SEED CAKE
- Preheat the oven to 350F degrees.
- Grease and flour a 9×13 inch baking pan.
- In a large bowl beat together the butter and sugar until fluffy.
- Then beat in the eggs and vanilla.
- In a separate bowl whisk together the flour, cornstarch, baking powder, baking soda and salt.
