Brown Sugar Topped Rhubarb Cake Recipe

This cake is absolutely perfect with the tart rhubarb and crunchy brown sugar topping!

A few weeks ago, I spent a lovely weekend with my sister! What do we always do when we hang out? Cook and bake, of course!

My Dad sent a huge bag of rhubarb with us and we had to bake a rhubarb cake!

My sister tried this recipe from a friend last summer and loved it. I chopped up all the rhubarb, she mixed up the cake and an hour later we had ourselves some dessert!


Ingredients (9x13 cake)

2 cups sugar
2 cups heavy whipping cream
2 eggs
3 cups flour
2 teaspoons baking soda
1/2 teaspoon salt
2 teaspoons vanilla
4 cups rhubarb, sliced
2/3 cup brown sugar

Instructions

  • Preheat oven to 350 degrees.
  • Grease a glass 9x13 baking dish. In a bowl, mix together all ingredients except brown sugar. 
  • Pour into baking dish, then sprinkle brown sugar over the top.
