Brie and Cranberry Bites
It happened again… somehow, December just snuck up on me, stealthy and sneaky-like, bringing with it the usual round of parties and potlucks and baking and shopping and gift-giving and merry-making.
That doesn’t exactly leave much time for baking, which is why I’ve teamed up with the rest of the Holiday Food Blog Party gang to share some of our favourite holiday-themed recipes.
The rest of the gals decided to take a walk on the sweet side, but personally, at this time of year I’m all about the easy appetizer recipes… probably because at our house, the holidays are synonymous with our big holiday Open House party.
Ingredients
1 sheet frozen puff pastry, thawed
½ cup cranberry sauce, preferably homemade
1 green onion, very thinly sliced
100g (3.5 oz) brie, cut into ½" cubes
Instructions
- Preheat oven to 400F. Lightly spray the cups of a mini-muffin tin with cooking spray, and set aside.
- Unroll the puff pastry sheet onto a clean work surface, and cut into 24 equally-sized squares. Gently press the pastry into the cups of the prepared muffin tin.
- Nestle a cube of brie into each pastry cup, then top with a pinch of green onion. Using a teaspoon measure, drop a spoonful of cranberry sauce to top of the brie.
