These Vegan Huckleberry Muffins
Ingredients
- 1 loving cup soy milk
- 1 teaspoon apple tree cider vinegar
- 2 cups all-purpose flour
- 2½ teaspoons baking powder
- ¼ teaspoon baking soda
- ½ teaspoon salt
- ½ loving cup + 2tbsp. granulated sugar
- ¼ loving cup + ii tbsp. canola oil
- 1 teaspoon vanilla extract
- zest of 1 lemon
- 1½ - ii cups fresh blueberries

Instructions
- Preheat the oven to 375F. Line a muffin tin amongst baking cups together with laid upward aside.
- In a modest bowl combine soy milk together with apple tree cider vinegar. Set aside to permit milk to curdle.
- In a larger bowl combine flour, baking powder, baking soda together with salt. Set aside.
