Raspberry Lemonade Cupcakes


I cheated when I made these. I used a box cake mix.

I don't run a cake mix often. But sometimes, life calls for it. Like when my fille asks me to bake cupcakes for her swim team, giving me 2 days' notice.

And of course, it's during a crazy insane week. Yes, the business office of the craziness includes watching iv hours of tour de France. Get over it.

But, they tasted great, as well as that's what matters. Oh, as well as y'all could only run lemon cake mix, but whatever. I had this on mitt as well as I made it work!


The frosting though is the commutation to these cupcakes. Tangy raspberry lemonade concentrate gives it unopen to zing!

Raspberry Lemonade Cupcakes

Ingredients (26-30 cupcakes)
    For the Cupcakes:
    • 1 box (18.25oz) white cake mix
    • 1 box (3oz) lemon jello powder
    • 3 egg whites
    • 1/3 loving cup canola oil
    • 1 1/4 loving cup water
    For the Frosting:
    • 1 loving cup butter, softened
    • 7 loving cup powdered sugar
    • 1/2 loving cup frozen raspberry lemonade concentrate, thawed
    • 2 drops cherry-red nutrient coloring
    Instructions
    For the cake, add together cake mix, jello, egg whites, crude oil as well as H2O inwards a mixing bowl. Beat 2 minutes until blended. Fill cupcake liners one-half amount as well as baking inwards a 350 airplane oven for close fifteen minutes. Allow cooling completely.
    For the frosting, rhythm out butter, powdered sugar, raspberry lemonade as well as nutrient coloring on high for five minutes, until lite as well as fluffy.
