Cake with mascarpone cream and coffee

All week I stayed longer in bed, without appetite, but with a great appetite for a good cake.
I thought a lot about the aroma and texture of a tiramisu and I wanted a similar cake. Today, even if I did not have the best condition I put myself on the job and one of the best cakes came out, just as I wanted.


Ingredients Casserole with mascarpone and coffee:
countertop:

  • 24 × 24 cm
  • 5 eggs
  • 120 g of sugar
  • 50 ml of oil
  • 60 ml of milk
  • 100 g flour
  • 25 g of cocoa
  • 5 g baking powder

Cream:

  • 250 g mascarpone
  • 3 yolks
  • 150 g of sugar
  • 50 ml of water
  • 1 teaspoon instant coffee
  • 1 cappuccino bag
  • 150 ml whipped cream
  • 5 g of gelatin
  • 20 ml of water
  • 9-12 biscuits
  • cocoa

Syrup:

  • 150 ml of water
  • 100 g of sugar
  • instant coffee
  • cappuccino
  • (From these ingredients I started everything, initially I wanted to make a chocolate cream, but it stayed the next time.)

Method of preparation:
countertop:

  1. White peppers are foamy with a salt of salt and a spoon of sugar. Leave it aside.
  2. The egg yolks mix with sugar until it doubles the volume, add the oil and milk and mix. Flour, cocoa and baking powder are chopped over the yolk cream and mix. Foamy whiteness is incorporated into the previous composition.
  3. The composition is poured into a paper tray with baking paper. Bake for 25-30 minutes in the preheated oven. Allow to cool, then cut into two sheets.

Cream:

  1. In a saucepan place the sugar and water (50 ml of water). Boil until the sugar is dissolved and bubbles appear above. From time to time, the edges of the pot are brushed with cold water to avoid the formation of 
  2. sugar crystals (this is very important !!!!). If you have a thermometer, the syrup is ready when it 
  3. reaches 124 degrees C. Add cappuccino and instant coffee. The yolks mix until they become pale, then add the sugar syrup in a thin wire, stirring continuously. After completing the syrup, continue mixing until you get a fluffy cream until it cools (about 10 minutes).
  4. Gelatin is hydrated in 20 ml of water. Dissolve in microwave and mix with egg cream. Stir whipped cream and mix with mascarpone cheese, then incorporate it into yolk cream and mix with a spatula.
