OATMEAL BANANA TODDLER MUFFINS
These Oatmeal Banana Toddler Muffins are not only great for the toddler in your home – they’re great for the whole family! Incredibly moist and lightly sweetened with a touch of sugar and ripened bananas, they’re sure to be a hit.
In an effort to try and get ready for when the baby arrived, I did quite a bit of meal prep and planning (you may remember my freezer meal post?!) But the thing is, it’s not only dinner time that could use a little extra attention; both breakfast and lunch can become quite crazy if you don’t already have something planned in advance. I’m sure many of you know what I’m talking about!
Ingredients
- 1 (8 ounce) cream cheese, softened
- 1/4 cup unsweetened applesauce
- 1/4 cup canola oil
- 1/2 cup sugar
- 2 eggs
- 3 really ripe bananas, mashed
- 1 tsp vanilla extract
- 1 cup quick oats
- 1 cup white whole wheat flour
- 3/4 cup all purpose flour
- 1-1/2 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1/2 tsp cinnamon
- cinnamon sugar for dusting, optional
Instruction
- Preheat oven to 350 degrees. Grease or line two 12-cup muffin tins with paper liners.
- Cream softened cream cheese, applesauce, oil, and sugar until smooth.
- Add eggs one at a time and continue mixing.
- Add bananas and vanilla
- Add oats, both flours, baking powder, baking soda, salt, and cinnamon. Mix until just combined (do not overmix!).
