OATMEAL BANANA TODDLER MUFFINS

These Oatmeal Banana Toddler Muffins are not only great for the toddler in your home – they’re great for the whole family! Incredibly moist and lightly sweetened with a touch of sugar and ripened bananas, they’re sure to be a hit.

In an effort to try and get ready for when the baby arrived, I did quite a bit of meal prep and planning (you may remember my freezer meal post?!) But the thing is, it’s not only dinner time that could use a little extra attention; both breakfast and lunch can become quite crazy if you don’t already have something planned in advance. I’m sure many of you know what I’m talking about!

  • 1 (8 ounce) cream cheese, softened
  • 1/4 cup unsweetened applesauce

  • 1 cup white whole wheat flour
  • 3/4 cup all purpose flour
  • 1-1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1/2 tsp cinnamon
  • cinnamon sugar for dusting, optional

Instruction
  • Preheat oven to 350 degrees. Grease or line two 12-cup muffin tins with paper liners.
  • Cream softened cream cheese, applesauce, oil, and sugar until smooth.
  • Add eggs one at a time and continue mixing.

  • Add oats, both flours, baking powder, baking soda, salt, and cinnamon. Mix until just combined (do not overmix!).
