Chickpea Brownies

Chickpea Brownies are a healthy alternative to regular brownies and are fudgy, chocolatey, and easy to make. They are made gluten free, dairy free and vegan.

So a few weekends ago, I made my chickpea blondies and they were such a hit with my family and friends that I knew I wanted to make a chocolate version.

I’m the biggest fan of any and everything chocolate, so when I realized I could make these just a little bit fudgier and a little bit more chocolate-y I was in.

I had to play around with the recipe a few times before I got it perfect, but it was worth the few rounds of “mess-ups” in order to get the perfect brownie.

This recipe calls for a food processor, but you could probably use a blender too. But the real question is, why haven’t you gotten a food processor yet? It’s by far my most favorite kitchen appliance, even more so than my Vitamix. I got mine for less than $40 and have used it for two years straight at least 3 times a week. No joke, this is my most used and most favorite appliance ever.

INGREDIENTS

  • 1 – 15oz can chickpeas, drained and rinsed.
  • 1/2 cup nut butter (I like almond or peanut)
  • 1/4 cup almond flour
  • 1/4 cup cocoa powder
  • 1/2 cup maple syrup
  • 1 Tbsp melted coconut oil
  • 1 tsp. vanilla
  • 1/4 tsp baking soda
  • 1/4 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup chocolate chips

INSTRUCTIONS

  1. Preheat oven to 350F.
  2. In a food processor, blend chickpeas, nut butter, almond flour, cocoa powder, maple syrup, coconut oil, vanilla, baking soda, baking powder, and salt.
  3. Continue to process, scraping down sides as necessary.
  4. Once creamy and smooth, take off lid and stir in chocolate chips.
  5. Do not process the chips.
  6. Pour into greased 8×8 pan. ** see note for extra thickness
