COFFEE COOKIES WITH MOCHA BUTTERCREAM FROSTING
That first sip of coffee … is there anything better? Normally I would say no. But that was before I had one of our Coffee Cookies with Baileys Frosting. Yum! These cake-y cookies have the perfect hint of coffee flavor and our topped with our delicious Baileys Irish Cream Buttercream Frosting. It’s a little bit of heaven in the shape of a cookie.
There was always something about that distinct coffee smell that really rubs me the wrong way. Maybe it’s because I once had to spend an entire night with some stranger’s cold coffee staining my jacket as I rode the bus back home from my part-time job in college. Maybe it’s because I once went through a Starbucks craze while in high school and tried to make my own coffee at home with disastrous results. Who knows.
The coffee cookies themselves are soft and spongy. Coffee has been infused into them, but what makes these cookies sensational is that they are filled with whipped mocha ganache and topped with incredibly rich coffee buttercream. I’m in love with the chocolate covered espresso beans so I threw some of those on top for the finishing touch.

INGREDIENTS
- 1 cup Butter (softened)
- 2 cups Powdered Sugar
- 2 Eggs
- 2 tablespoons Instant Coffee dissolved in 1/4 cup water
- 1 1/2 tablespoons Half n' Half
- 3 1/2 cups Flour
- 1 teaspoon Baking Soda
- 1/4 teaspoon Salt
- 1/4 cup melted Chocolate Chips
- Cookie Sheets
- In a mixing bowl, cream butter and sugar.
- Add the eggs and mix until incorporated.
- Mix in the Instant Coffee that has been dissolved in water and the Half and Half.
- Mix in the baking soda and salt.
- Finally, mix in the flour.
- Refrigerate the dough for 30 minutes.
- Roll the dough into balls and slightly flatten them.
- Bake in a 350 degree oven for 9-10 minutes.
- Allow the cookies to cool.
- Frost cookies with a batch of our delicious The Best Mocha Buttercream Frosting
- Drizzle with melted chocolate chips over the frosting.
