VANILLA AND CHOCOLATE PIZZELLES

Let’s start with The Great Food Blogger Cookie Swap! I remember last year at this time seeing all sorts of wonderful cookie recipes on my favorite food blogger’s websites. I was curious why so many of them were sharing these wonderful cookie recipes on the same day. I did a little investigating and discovered they were part of this cookie swap. The Great Food Blogger Cookie Swap is in it’s 4th year and is a way to bring food bloggers all over the world together and celebrate with delicious cookies! Not only is it a great way to meet new bloggers, but it also benefits Cookies For Kids’ Cancer, a national non-profit organization committed to funding new therapies used in the fight against pediatric cancer.


INGREDIENTS

Vanilla Pizzelles
1 1/4 cup all purpose flour
1/2 cup whole wheat pastry flour (or more all purpose flour)
3/4 cup granulated sugar
2 t. baking powder
1/4 t. kosher salt
1/2 cup unsalted butter, melted
2 whole eggs
1 egg white
2 t. vanilla extract
Chocolate Pizzelles
1 1/4 cup all purpose flour
1/2 cup whole wheat pastry flour (or more all purpose flour)
1/4 cup unsweetened cocoa powder
3/4 cup granulated sugar
2 t. baking powder
1/4 t. kosher salt
1/2 cup unsalted butter, melted
2 whole eggs
1 egg white
2 t. vanilla extract
INSTRUCTIONS


  • Preheat the pizzelle maker according to manufacturers instructions.
  • In the bowl of a stand mixer or using a hand held mixer beat the eggs, sugar, melted butter, and vanilla until smooth.
  • In a separate bowl whisk together the flours, baking powder, salt, and cocoa powder if making the chocolate version.
  • Add the dry ingredients to the wet and beat together until everything is combined and smooth.
