Bánh Bao Chỉ Cupcakes Recipe

Pandan (Coconut) cupcakes
- 2 cups flour
- 1/2 tsp salt
- 2 tsp baking powder
- 1 stick butter, softened
- 2/3 cup sugar
- 2 eggs
- 1 cup coconut milk
- 1 tsp pandan (coconut) extract
- 1/2 cup chopped peanuts (optional)
Instruction:
- Preheat oven to 350 F. Line muffin tin with cupcake liners
- Mix flour, salt, and baking powder in a medium bowl
- Cream butter and sugar in a large bowl until smooth. Add eggs, coconut milk, and pandan extract; continue mixing.
- Slowly add flour mixture to batter and mix until fully incorporated. Add peanuts, if using, and mix.
- Spoon batter into liners 2/3 full
- Bake 20 to 25 minutes or until toothpick inserted in center comes out clean. Cool completely before frosting
