Easy Irish Whiskey Lava Cakes
You won’t believe how quickly these come together! These five basic ingredients, stir together in less than 5 minutes, and are hot out of the oven in less than 30 minutes. This delicious recipe takes Chocolate Lava Cakes to a whole new level!

- 6 eggs
- 2 ½ cups powdered sugar
- 1 (4 ounce) package semi-sweet baking chocolate
- 1/3 cup cocoa powder
- 1/2 cup Irish Whiskey
- 6 scoops ice cream
Instructions
- Preheat oven to 350 degrees. In a large bowl, whisk together eggs and powdered sugar. Break baking chocolate into squares and place in a microwave-safe bowl and microwave for 30-60 seconds. Stir, then return to the microwave for another 30-60 seconds. Repeat until the chocolate is melted.
- Add melted chocolate to the egg and powdered sugar batter, whisk in cocoa powder and 1/3 cup whiskey. Spoon batter into 6 ramekins greased with nonstick baking spray (or into 6 large muffin tins which have been generously sprayed with nonstick baking spray and floured with cocoa powder.) Bake for 22-30 minutes, or just until the edges of the cake firm up and the center is soft but not jiggly. Remove from oven.
- Cakes baked in ramekins can be served immediately. Cakes baked in individual muffin tins will need to be cooled for 1-2 minutes before being gently turned out onto a cooling sheet.
- Serve within 10 minutes for the most gooey chocolate in the center of your cakes. Enjoy!
